How many ways can you make them?
Mexican restaurants have lots and some several to choose from:
Spanish rice from dry to very wet with tomatoes and various spices;
black beans, pintos, refried, charo beans, some with pork, bacon or peppers...
The Louisiana variety of dirty rice and red beans - sort of like kidney beans - I 'm really not sure of the difference but there seems to be. Oh I personally like to ad the old stand by of hot sauces Tabasco = these special peppers just like to meet my saliva and sparkle in there.
India has the most varieties for sure. As there are many temperaments of bodies according to their ancient system of medicine - Ayurveda, think of it as fast skinny bodies, fat slow moving ones, middle of the road moving types... a bit more complicated and in no way doing the system justice, but an westerners idea.
Brown rice and mung beans is a staple I can enjoy almost continuously or the white rice version.
Called by several names in India depending on the local, culture, and language of the locals making it, or I should say them...
Is simple food really healthy? Oh yes more so than most...
Soak the mung beans over night, like most beans now they become activated 'sprouts' with hundreds of times more nutrients in them.
Wash the rice well.
Combine a cup of rice to about 1/4 to 1/2 cup of mung beans depending on your taste.
in a pot with tight lid combine with 2 sups of water or 3 if you like it very wet.
You can also substitute milk for part of the liquid.
a pinch of salt - some use a sweetener I just don't believe white sugar is a food - but is a poison.
now the spices...
this where the science of Ayurveda comes in...
depending on your temperament, and needs you vary these.
ginger, turmeric, cardamon - green & black, coriander, cilantro are some of the choices.
none is also a good choice.
Cook this for about 20 -40 minutes depending on the type of rice you use.
If basmati uncovered and simmered for about 20
others about 40 minutes.
When you are ready to eat it
put on the ghee or clarified butter.
Yogis live on this eating every 4 hours, and sleep a bit, stretch a bit, meditate a lot, then repeat the whole process every 4 hours continuously for several weeks or even more.
I have witnessed the amazing results of this practice in consciousness raising.
Lots of fiber, lots of nutrition, easy to digest. Try this for day a week or a month...
